Casita Breakfast Tacos with Sausage and Poblano

About the Recipe

Ingredients

  • 1.5 lbs ground sausage

  • 2 poblano peppers, seeded and diced

  • 1 small onion, diced

  • 6 large eggs, beaten

  • 8 small flour tortillas

  • 1 cup shredded cheddar cheese

  • Salt and pepper to taste

Preparation

  1. In a skillet, cook sausage over medium heat until browned, breaking it up as it cooks (~8 minutes). Drain excess fat.

  2. Add poblanos and onion; cook 5-7 minutes until softened.

  3. Pour in eggs, season with salt and pepper, and scramble until set (~3 minutes).

  4. Warm tortillas, then divide sausage-egg mixture among them. Top with cheese and serve.
